The cheese has a rich history and originally originated as a convenient source of food for herders and their herds in the rugged mountain environment. One of the characteristics of chhurpi is that it has a very low moisture content. This makes it very difficult to sink your teeth into, but ensures that the cheese remains edible for years. In the remote highlands of the Himalayas, this fact has always made the product extremely popular.
